Citric Acid

Citric acid is a naturally occurring fruit acid. It is a weak acid that is found naturally in all citrus fruits.
Why we use it ?
We add citric acid to neutralize the alkalinity and to create our fizzy reaction. We combine citric acid with sodium bicarbonate to form the basis of our fizzy reaction to water.
